Banana Nut Bran Muffins

Today after reading Julie’s post featuring a cake vs pie bracket (think March Madness) I was really craving something sweet and cake-like. I settled for some Banana Nut (with a little chocolate) Bran Muffins 🙂

Banana Nut Bran Muffins (altered from the Hodgson Mill)

Ingredients:

  • 1 box Hodgson Mill Bran Muffin Mix
  • 1 T Vegetable Oil
  • 1 non-fat Vanilla Greek Yogurt (I subsituted this for 1/2 c 2% milk)
  • 1 Egg
  • 1/4 t Cinnamon
  • 2 Mashed Bananas
  • 1/4 c Chopped Nuts (I used Walnuts)
  • 1/4 t Almond Extract
  • 1 handfull of Mini Chocolate Chips

Directions

  1. Preheat oven to 375 F
  2. Grease muffin pan
  3. Mix together muffin mix and oil. Add remaining ingredients and mix until incorporated
  4. Let mixture sit for a few minutes
  5. Place muffin mixture in muffin pan (mine made 9 muffins)
  6. Top with nuts and chips if desired. Bake 15-20 minutes (mine took 17)
